I'd recommend Terry Jones's BBC TV series on the Crusades; not exactly
literary, although it's available in book form.  It gives an unbiased
account of the Crusades.

The Celtic Crusades trilogy give an interesting and in some parts
disturbingly graphic account of the Crusades, although of course the
historical facts are intermingled with fantasy.  I'd strongly recommend
Lawhead's 'Byzantium' which (eventually) depicts the situation in the Middle
East prior to the Crusades.  It's a fictional account based on the lives of
several Celtic saints.  I'd put it right up there in my top 3 novels with
'Lord of the Rings' and George MacDonald's 'Lilith'.
