What makes genuine southern sweet tea so good is that the sugar is put in 
when the water is boiling and it is then fully disolved and liquified.

When I have been down south and been asked whether I wanted my tea sweet or 
not sweet I was always a little perplexed, because us northerners simply add 
sugar or other sweetners to taste.  

So I asked my secretary about it.  She was from North Carolina. She tipped me 
off to the puttin sugar in while the water is boiling thing.  So at large 
gatherings they often make a pot (not a teapot, but a stockpot) of sweet tea 
with the sugar added to the hot water and non sweet tea.  That is why you are 
given a choice.
