My favorite book on the Crusades is Karen Armstrong's _Holy War_.  Armstrong is
an expert on the historical interrelations of Jews, Christians and Muslims, and
she does a very good job describing the various crusades from multiple
perspectives.  Her style is very readable, and she has lots of interesting
insights along the way.  Highly recommended.
