That may depend on how you define "species".  If a species evolves in such
a way that it becomes two distinct populations that cannot breed with each
other, then I believe most scientists would say that evolution from one
species to another has occurred, there.  And I believe this process *has*
been observed.  But again, I'm just an ignorant history major.  :)

We've only been looking for a century or two -- give us time.  We already
have some transitional fossils; presumably we'll find others.  Besides, is
there any reason to believe nature is interested in preserving fossils in
a systematic, organized way, the way that we might want it to?

Au contraire, there is a science to the study of the origins of life just
as there is a science to the study of history or archaeology.  Science
isn't limited to repeatable facts.  Tracing the links between the DNA of
different species is at least as scientific as tracing the literary links
between ancient texts which plagiarize and quote each other.
