Zabaglione - Italian Pudding

Ingredients

6 ea Egg Yolks
6 teaspoon Sugar
6 tablespoon Amaretto
1 tablespoon Orange Peel Grated
1/2 cup Whipping Cream
for garnish Chocolate Shaved


 

Instructions
1. Combine egg yolks with sugar in top of a double-boiler and beat with a wire whisk until frothy. Add Amaretto and grated orange peel.

2. Place mixture over gently boiling water and beat continuously until smooth.

3. Remove from heat and set boiler top on a bowl of ice cubes to cool.

4. Then whip cream and fold into cooled custard with a rubber spatula.

5. Pour into individual serving cups and chill.

6. To garnish, sprinkle with shaved chocolate.
