Sirloin Portobellos

Ingredients

1/2 pound Sirloin Cut Into 1/8 Strips 2 Inches Long
4 ea whole Portobello Mushrooms
1 teaspoon Cajun Seasoning
1 tablespoon Olive Oil
1 ea Jalapeno Pepper Finely Chopped
2 ea Green Onions Finely Chopped
1/2 cup Colby And Monteray Jack Cheese Shredd
1 tablespoon Parsley Chopped


 

Instructions
1. Clean mushrooms.

2. Remove and save stems.

3. Using a spoon, remove and discard gills from underside of mushrooms.

4. Brush mushroom caps on both sides with olive oil and 1/2-tsp. of Cajun seasoning.

5. Chop stems and stir fry with sirloin, jalapenos and onions until sirloin is no longer pink.

6. Remove filling from heat and add remaining seasoning and cheese, sprinkle with parsley.

7. Spoon equal amounts of filling into mushroom caps.

8. Grill filled mushroom caps over medium hot coals for 5 minutes or until mushrooms are soft.

9. Cut into wedges and serve.

10. You can substitute shoulder steak, top round steak or round tip steak for the sirloin.
