Roasted Garlic Puree

Roasted garlic puree not only cries out to be spread on a piece of sourdough bread, but it also adds rich flavor to potatoes and polenta. See also Garlic Mashed Potatoes in this collection.

Ingredients

4 pound Garlic Tops Cut Off
3 cups Milk
1/2 cup Olive Oil
to taste Salt & Pepper


 

Instructions
1. Preheat oven to 350.

2. Place the garlic in a small saucepan, cover with the milk, and simmer for 10 minutes.

3. Drain the milk and place the garlic bulbs bottom-side-down in an ovenproof pan. Add the olive oil and cover the pan with a lid or foil. Bake at 350 for 1 1/2 hours or until the garlic bulbs are soft.

4. Cool the garlic and oil, squeeze the soft garlic out of the skins, and place in a blender with the olive oil in which you baked the garlic. Puree the garlic and oil until smooth.
