Prosciutto Wrapped Grilled Scallops

Ingredients

10 slice Prosciutto Paper Thin
10 Sea Scallops
1 tablespoon Olive Oil
2 tablespoon Emeril's Essence See * Note
1 Melon Relish See * Note
5 pieces Arugula Fried
to taste Freshly-Ground Black Pepper
2 tablespoon Parsley Chopped


 

Instructions
* Note: See the "Emeril's Essence Information" and "Melon Relish" recipes which are included in this collection.

Preheat the grill. Season each scallop with olive oil and Emeril's Essence. Grill each scallop for 2 to 3 minutes on each side. Remove from the grill and allow to cool. Wrap the sides of each scallop with the Prosciutto. Pile the Melon Relish in the center of the plate. Arrange the scallops around the relish. Garnish with fried arugula, black pepper and parsley. This recipe yields 1 serving.
