Preserved Ginger

This recipe uses julienned ginger poached in simple syrup. You can serve preserved ginger with peaches or pears, paired with chocolate, or folded into whipped cream. Although I frequently use preserved ginger in desserts, it has many other savory uses, such as being paired with foie gras or tossed in a salad with fresh figs.

Ingredients

6 tablespoon Ginger Julienned
1 1/2 cup Simple Syrup included In This Collection


 

Instructions
1. Place the ginger and 1/2 cup of the simple syrup in a small saucepan. Simmer over medium-low heat for 15 minutes. Strain off the syrup, add a fresh 1/2 cup of simple syrup to the ginger, and simmer again for 15 minutes. Repeat this process once more.

2. Cool the ginger in the final batch of simple syrup. Refrigerate in the syrup until needed.
