Ice Cream Base -- Philadelphia Style

A quick recipe that comes together in about 3 minutes and produces a clean-tasting base. Good with fruit purees.

Ingredients

1 cup Milk cold
1 cup Cream
1/3 cup Superfine sugar
1 dash Vanilla extract
1 pinch Salt
3 cups Sweetened fruit puree strained
1 dash Lemon juice for fruit puree
to taste Superfine sugar for fruit puree


 

Instructions
1. Three cups of fruit puree (less is fine), strained, brightened with a squirt of lemon juice, and sweetened with superfine sugar (or corn syrup) until it's just a bit too sweet on your tongue. Chill.

2. Mix together the milk, cream, superfine sugar, vanilla extract, and salt.

3. Mix the cold sweetened fruit puree with the milk & cream base.

4. Freeze in ice cream maker bowl until firm.

It will taste wonderful right away and for about 7 hours after that, but then it will start to lose its puddingy sweetness and become icy.
