Fried Curry Rice with Shrimp

Ingredients

4 cup Rice Steamed
1/2 pound Shrimp Peeled Deveined Frozen Is Okay
1 large Onion Chopped
2 ea Shallot Chopped
1 teaspoon Garlic Chopped
2 large Tomatoes
2 tablespoon Oil
2 tablespoon Butter
1 tablespoon Curry Powder
to taste Salt & Pepper


 

Instructions
1. Wash the tomatoes, then cut into quarters. Remove seeds, then cut tomatoes to make 1/4 inch squares.

2. In a large pan, saute chopped onions, shallots and garlic in butter and oil for about 2-3 minutes.

3. Add shrimps, then stir-fry for about 4-5 minutes until cooked.

4. Add tomatoes and curry powder and saute for 1 more minute.

5. Add steamed rice and mix very well. Season with salt and pepper.
