Creme Brulee

Ingredients

4 each Egg Yolks
3 tablespoon Sugar
pinch Salt
2 cups Heavy Cream
1 teaspoon Vanilla


 

Instructions
Heat oven to 350.

Beat egg yolks until slightly thickened. Gradually add sugar and salt. Scald heavy cream. Temper the egg mixture. Pour heavy cream slowly into tempered egg mixture, stirring to blend. Add vanilla. Stir to incorporate. Pour mixture into baking ramekins. Set ramekins in a pan with 1" of water and bake at 350 degrees for 45 mins to 1 hour. Test with clean knife.

Can be prepared a day ahead. Sprinkle top with sugar and/or top with fresh sliced peaches or strawberries.
