Cherry Granita

This amazingly refreshing summer ice is a far cry from the neon-colored confections we used to get from the ice cream truck.

Ingredients

1 pound Cherries
2 cups Sugar
1 ea Lemon


 

Instructions
Squeeze the lemon and set the juice aside. Pit the cherries (they make cherry pitters, but you can just cut them in half with a pairing knife -- they don't have to be pretty). Put the cherries, sugar, and lemon juice into a food processor fitted with the metal blade. Puree, then add 1 to 2 cups water, as needed, to make a smooth and fairly thick puree.

Heat in a 2 quart pot over medium heat to simmer until the sugar is dissolved. Pour into a loaf pan and freeze. Serve by scraping off the top with a spoon (or a fork) to make crystals. The granita ice should be rather grainy, not smooth like a sorbet.
