Caramelized Orange Chips

Ingredients

1 ea Navel Orange
1/2 cup Sugar


 

Instructions
1. Preheat oven to 350.

2. Line a heavy-duty baking sheet with heavy-duty foil.

3. Using a mandoline, a japanese vegetable slicer or a study serrated knife (such as a steak knife), slice the orange into the thinnest possible slices.

4. Sprinkle the baking sheet evenly with about 1/4 cup sugar. Lay the orange slices on top. Spinkle with about 1/4 cup sugar, or enough to cover the oranges generously.

5. Bake for 15 minutes. Check to be sure the sugar has caramelized. If they're starting to brown on the bottom but not on the tops, turn the slices over using tongs. Cook for another 3-4 minutes or until the chips are deep brown but not actually burned. Don't touch them -- they are dangerously hot. They won't cook evenly, but don't worry about that.

6. Cool the slices on the foil until they reach room temperature then peel them off. Store in air-tight tin at room temperature.
