Boursin Chicken With Onion & Garlic Salsa

Ingredients

2 ea Chicken Breast Boned & Skinned
to taste Emeril's Essence included In This Co
1 tablespoon Olive Oil More As Needed
1 medium Onion Diced
1 tablespoon Garlic Minced
1 teaspoon Oregano Diced
to taste Tabasco Sauce
1/2 cup Marsala Wine
2 1/2 ounce Boursin Cheese Divided


 

Instructions
1. Preheat oven to 350.

2. The chicken breasts should be close to even thickness. Coat both sides of the chicken breasts with Emeril's Essence. Set aside.

3. In a large skillet, heat olive oil (enough to cover the bottom of the pan) over medium heat. Add the diced onion and sweat until translucent, about 10 minutes. Add the garlic, oregano, and tabasco. Stir garlic, oregano, and tabasco into onions until heated through.

4. Add the chicken breasts and cook over medium-high heat until nearly done, turning as necessary.

5. Remove the chicken breasts from the onion mixture and put into an oven-safe container. Top with Boursin cheese. Put into preheated oven to melt the cheese, 8-10 minutes.

6. Leave the onion mixture in the skillet. Deglaze the skillet with marsala wine and cook until reduced by 2/3.

7. When the chicken is done, plate and top with a dollop of the onion salsa.
