Basic Poultry Brine

This is used in the Roasted Asian Duck Galantine recipe.

Ingredients

1 pound Salt
12 ounces Dextrose or Honey or White or Light Brown Sugar
1 tablespoon Garlic Powder Optional
1 1/2 tablespoon Onion Powder Optional
7 ounces Tinted Curing Mixture
3 gallons Water Warm


 

Instructions
Stir together the salt, sweetener, garlic and onion powders, if desired, and TCM. Add the water and stir until the dry ingredients are dissolved. Cool the brine completely.
