Apple-Fennel Chutney

Prepared at the Midwest Culinary Institute at Cincinnati State Technical and Community College.

Ingredients

1 1/2 cups Apple chopped (about 1 large)
3/4 cup Fennel diced (about 1 bulb)
3/4 cup Brown sugar packed
1/4 cup Pecans chopped
1/3 cup Raisins golden rasins are good
1 tablespoon Crystallized ginger chopped
1/2 teaspoon Salt
1/2 cup Cider Vinegar


 

Instructions
In a medium saucepan, combine all chutney ingredients; mix well. Bring mixture to a boil. Reduce heat to low, cover, and cook 15 minutes.

Remove cover and cook 15-20 minutes more, or until fruit is tender.
