Anise-Flavored Beet Salad

(Remolacha al Anis)

Beets are always a refreshing addition to a tapas menu, especially when flavored with a hint of anise.

Ingredients

2 medium Fresh beets (about 1 pound), stems trimmed
6 tablespoons Extra virgin olive oil
3 tablespoons Red wine vinegar
to taste Kosher Salt
to taste Freshly ground pepper
1 small Onion coarsely chopped
1/2 teaspoon Anise seed crushed


 

Instructions
Cover the unpeeled beets with water, bring to a boil, then simmer, covered, for about 1 hour, or until tender. Peel, cool, and cut into 3/4-inch slices. Cut each slice into quarters.

In a medium bowl beat together with a fork the oil, vingear, salt, and pepper. Stir in the onion and anise, then mix in the beets gently. Cover and refrigerate until ready to serve.

DO AHEAD: The salad gains flavor when kept for several hours or days in the refrigerator.
