Aioli

Aioli is a garlic mayonnaise from provence, usually eaten with cold vegetables, meats, and fish. You could try stirring a few cloves of minced galic into a cup of prepared mayo, but you're better off making it yourself.

Ingredients

6 clove Garlic
2 ea Egg Yolk
1 tablespoon Lemon Juice
1 teaspoon Dijon Mustard
to taste Salt & Pepper
1 1/2 cup Olive Oil


 

Instructions
Puree the garlic in a food processor or blender. Mix egg yolks and lemon juice, and allow the mixture to stand for ten minutes. Add yolk mixture, mustard, salt, and pepper to the garlic puree and blend. With the motor running, pour olive oil in a slow, steady stream, blending until the combination is shiny and thick. Transfer the aioli to a bowl and refrigerate, covered, until ready to use.
