DINNER 298: Thursday, October 26, 2006

Wendy had a brush-up for ROCKY HORROR SHOW at Falcon Theater so I did something I haven’t done in a while — I cooked dinner for myself.

On my way home from work, I stopped at the market and picked up a couple Cornish Hens, salad, and some red skinned potatoes. I made a paste from some minced garlic, salt, pepper, rosemary, and olive oil and spread a thin coat on the hens, under and over their skin. I split the hens and broiled them until the skin was crispy and golden brown. I wrapped two halves for another meal. I boiled the potatoes in salted water until they were fork tender then mashed them with some butter and fat-free milk (we don’t have any ‘real’ milk). The potatoes weren’t great — the lack of richness from milk was evident — but they were very passable. The hen halves were delicious! I had a bit of yogurt and some pistachios for dessert.
