Opening Night at Jean-Robert’s Table 2010-08-10

Last night, Tuesday August 10, 2010, was the opening night at Jean-Robert’s Table, the long-awaited new restaurant by Jean-Robert de Cavel. I’ve been working there to assist with the opening, and will continue to work there as my “moonlighting” restaurant job. There are several pictures…

Y-Peeler

This is a picture of a vegetable y-peeler. Sometimes, I need to find this picture when friends ask me what kind of peeler they should purchase to peel vegetables. Most recently, a friend wrote to ask about the best tool for peeling asparagus. This is…

I passed my American Culinary Federation Certified Chef de Cuisine (CCC) examination in an intense 3-hour practical examination today (after previously completing a paper exam and three 8-hour refresher courses)!

Tonight, Wendy and I celebrate!

(And today is Achilles’ 3rd birthday, so happy birthday to the rat-bat-bunny-cat!)

Persistence Pays Off

Thank you all for being such a persistent bunch! Several of you asked for more information about the examination I took last Saturday, my menu, and some particulars. I am flattered by the interest. Here you go… My menu: Sauce Veloute (Chicken Stock) Sauce Espagnole…

Yes, Virginia, here are my thoughts about knife sharpeners…

I received a Chef’s Choice Hybrid “Diamond Hone Knife Sharpener” for Christmas and have no idea if this is something I can use on my knives or if I should use it on them. I was hoping you would be able to help me out so I know whether to return it or keep it.

Wendy’s 50th Birthday Dinner

Wendy’s 50th Birthday Dinner

Wendy had a significant <ahem> birthday on September 17, 2021. We celebrated on September 19 with 8 folks (Wendy, Beth, Summer, DJ, Alex, Jay, Greg, and me) at our house.

The menu is included here and some pictures of the food! As a welcome, we had olives & cheese with bubbles to drink.

I really enjoyed prepping the dinner — over the course of three days, doing a little bit each day — and executing it on the night of the party. Four of the eight guests are chefs and each one lent their assistance executing a course. I really enjoyed cooking for & with my culinary colleagues, and working together to make Wendy’s special dinner a memorable one!

Jean-Robert de Cavel – RIP, 2022-12-23

Jean-Robert de Cavel, the Chef for whom I worked for over 14 years, passed away on December 23, 2022. He was 61 years old. I worked with him at an event on November 19, 2022. This was the last time I saw him. Fortunately, the…
