The explanation I've heard for why people squeeze before capping is that
they're afraid gas will escape the seal, allowing the soda to go flat. The
squeeze-cap motion is meant to create negative pressure inside so that the
CO2 won't push its way out; it's more directly a preventative act than a
preservative act. Right. But I'm not sure that it helps a bit.
Course I was always told that, for optimum beverage enjoyment, a bottle,
once opened, should be emptied within the hour.
