recipe installment #2
curried tofu with fruit and quinoa

1c water
1/2c quinoa rinsed and dried
2 teaspoon butter(margarine)
1/2 diced onion
6 oz firm tofu well drained
1 apple (macintosh) thinly sliced
1/4c coursely chopped dried apricot halves
2 tbsp chopped almonds
3/4 tsp curry powder
1/4 tsp ground cumin
1/4 tsp turmeric
1/4 tsp freshly ground black pepper
2 tbsp non fat yogurt

1.) in 1 qrt saucepan over high heat boil water and add quinoa cover and 
reduce to med/low heat. simmer 20-25 min or until transparent.   drain off  
excess.  let stand for 5 min and fluff with fork.
2.) in non stick fry pan melt butter on med heat.  add onions cook till 
tender.
3.)cube tofu add to fry pan add apples, apricots, curry, cumin, turmeric and 
pepper.   cook 6-8 min until apples are tender.
4.)add quinoa.  mix well.  serve topped with yogurt.
